Course Description: In an age of unprecedented strain on global food systems, effective communication, behavioural insights, and consumer awareness have become essential tools for achieving a sustainable food future. This course examines the intersection of communication, customer behaviour, and sustainability within the food security framework. Participants will acquire actionable insights into promoting positive change in global food systems by exploring how narratives, campaigns, and consumer psychology influence food production, distribution, and consumption patterns. Course Objectives: This course aims to equip participants with the skills to: 1. Recognise the key global challenges to food security and sustainability, such as food waste, inequality, and climate change. 2. Analyse consumer behaviour patterns and their influence on food systems, including trends in ethical consumption and green marketing. 3. Devise effective communication strategies to advocate for sustainable food practices at the individual, community, and policy levels. 4. Explore the role of media, storytelling, and digital platforms in shaping food-related behaviours and decision- making. 5. Design practical solutions and campaigns that align with the UN Sustainable Development Goals, particularly Goal 2 (Zero Hunger) and Goal 12 (Responsible Consumption and Production). Teaching Methods: This course is highly interactive, combining lectures, discussions, and hands-on activities to ensure a dynamic and engaging learning experience. Participants will: 1. Participate in group debates on ethical and sustainable food practices. 2. Search on the web to understand how sensory perception influences food choices. 3. Analyse real-world communication campaigns and identify best practices. 4. Work in teams to design and pitch a sustainable food initiative. Learning Outcomes 1. Demonstrate a comprehensive understanding of the key challenges in global food security, including food waste, climate change, resource inequality, and overconsumption. 2. Identify and critically evaluate sustainable practices in agriculture, production, and consumption. 3. Analyse behavioural factors influencing consumer food choices, including habits, cultural influences, and perceptions of taste and sustainability. 4. Design and execute communication campaigns that tackle food security challenges with transparent, engaging, and data- driven narratives. 5. Harness digital platforms, social media, and emerging technologies to amplify messages about food sustainability and engage diverse audiences. 6. Evaluate the role of influencers, multimedia campaigns, and interactive content in driving change at the community and global levels. |
